Pumpkin pancakes

I promise you that they are the best pumpkin pancakes you will ever try! And the best thing is that they are in their version without refined sugar, dairy and gluten.




Dry ingredients

  • 4 tbsp oat flour

  • 4 tbsp of almond flour

  • 1 tsp baking powder

  • 1 1/2 tbsp of monk fruit


Wet Ingredients

  • 1 egg

  • 4 tbsp of pumpkin puree

  • 1 tbsp of coconut oil

  • 2 tbsp sugar-free maple


Toppings

  • nuts



Instructions

  1. Mix the wet ingredients in one bowl and the dry ingredients in another. Combine both mixtures afterwards.

  2. Toast and chop the walnuts. You can toast them for about 3 minutes in the pan over medium heat, stirring constantly.

  3. Prepare your pancakes. I recommend that you cover them in the pan so that they become more spongy.

  4. Serve with the topping on top and more fruits to taste.
