Mini Chocolate Chip Muffins

These muffins, apart from being addictive (because you will want to eat more than 1 hahaha), are the best option for a dessert craving and with better ingredients. They are gluten free and low in sugar!




Ingredients

Dry

  • 1 +1/4 cups almond flour

  • 1/2 cup oat flour

  • 1 tsp baking powder

  • chocolate chips


Wet

  • 1 tsp vanilla

  • 1/2 cup unsweetened Greek yogurt

  • 4 cds coconut sugar

  • 4 monk fruit cds

  • 3 cds melted ghee

  • 1 egg



Instructions

  1. Preheat the oven to 170ºC

  2. Sift and mix the dry ingredients, except for the sprinkles that go at the end.

  3. Add the wet ingredients to the same bowl and mix. Add chocolate chips to taste.

  4. In a mini muffin mold, add liners and approximately 2 tablespoons of dough per muffin (remember that they do not inflate much, so fill your molds well). Add more sprinkles on top.

  5. Bake for 15-20 minutes and that's it!
