Lemon Ricotta Pancakes

These pancakes have a delicious lemon flavor along with a creamy texture that the ricotta gives them. They re a great source of protein, and they are keto friendly, sugar free and gluten free.

You can prepare them with pancake flour (the one that is already measured). One of my favorite brands is Red Bob Mill's.
Ingredients
1/2 cup of pancake mix
1/2 cup of unsweetened plant-based milk
1 egg
1/4 cup of ricotta cheese
juice of 1 lemon and its zest
3 tbsps of monk fruit
1 tsp of poppy seeds

Mix all the ingredients in a bowl.
You will need a pancake pan, grease it and add the mix.
Once bubbles begin to appear, is time to flip it.
Serve with some whipped cream, poppy seeds, and lemon slices.
