Grilled cheese and roasted tomato soup

For soup:
1 tomato saladette
1/2 red pepper
1/2 cup cherry tomatoes 1/2 white onion
2 cloves of garlic
Fresh basil leaves 2 tbsp olive oil Salt and pepper to taste Rosemary to taste
1 cup of water
1 cup bone broth
for the sandwich
2 slices of bread
Cheddar cheese to taste Butter to taste
Grated parmesan cheese to taste
Instructions
1. In a tray, place salted tomato, red pepper, cherry tomatoes, white onion, garlic cloves and fresh basil leaves.
2. Season with olive oil, salt, pepper and rosemary
3. Roast in the oven at 170oC for 35 minutes
4. Blend everything with a cup of water. You can strain the mixture for better consistency.
5. Return to a pot over medium heat and add a cup of bone broth along with 2 tbsp.
Tomato paste.
6. Taste and season to taste to adjust flavor. Let it cook for 5 minutes.
7. Meanwhile, add the cheddar cheese to a slice of bread, close with another slice and
add butter and grated parmesan cheese on top of that slice
8. Heat the sandwich in a frying pan and repeat the butter and parmesan cheese on top of the
another slice.
9. Serve the soup with the sandwich
