Eggs in a crispy cheese crust

A breakfast idea with everything good: easy, nothing expensive, quick and delicious! The essential touch is a delicious layer of Isadora refried beans, combined with the cheese crust.

Ingredients

Corn tortilla

30 g Isadora refried beans

30 g Oaxaca cheese

Egg

1/4 avocado

Coriander to taste

Salt and pepper to taste

2 teaspoon oil


Instructions

1. In a frying pan over medium-low heat, add a teaspoon of oil

2. Crumble your cheese and add it to the pan in the shape of a circle

3. Add the egg in the middle of that Cheese circle and cover the pan. Let it cook until the yolk has the texture you like.

4. Meanwhile, in another pan, add another teaspoon of oil and heat your refried beans.

5. Heat your tortilla and add the already heated beans

6. Once the egg is the consistency you like, add it on top of the tortilla with beans

7. Serve with avocado, cilantro, salt and pepper to taste
