Butternut squash, pomegranate, feta and pear salad

A squash that tastes just like its name: butternut squash.

This is a salad that tastes like dessert! It combines seasonal ingredients and gives them a unique flavor with feta and almond dressing.




Ingredients

  • 1/2 butternut squash

  • 1/2 pomegranate

  • 1 pear

  • dates to taste

  • walnuts to taste

  • Approximately 8 Brussels sprouts

  • 40 grams of feta cheese


Dressing

  • 1/4 cup of almond cream

  • 1 cd of honey

  • 1/2 cd of mustard

  • juice of 1 lemon

  • salt and pepper to taste

  • water



Instructions

  1. Preheat the oven to 190ºC

  2. Cut and peel the pumpkin into cubes. Add olive oil, salt and pepper to taste and bake for 35 minutes.

  3. Cut the Brussels sprouts very finely into strips. Cut the pear into thin slices and the dates into small pieces.

  4. Chop the walnuts and toast them for about 3 minutes over medium-high heat in a frying pan.

  5. Prepare the dressing by mixing all the ingredients and mix in tablespoons of water to make it more liquid.

  6. Add the baked pumpkin to a plate and add the rest of the ingredients. Add dressing to taste.
